Cilantro Lime Rice

This is similar to the rice found at Cafe Rio.

Ingredients:
  • 3 C chicken broth
  • 1 1/2 C uncooked white rice
  • 2 tsp lime zest
  • 2 T chopped cilantro
  • 2 small cloves of minced garlic
  • 1 Tbsp butter
  • Juice of 1/2 lime
  • Pepper to taste

In a saucepan, combine chicken broth, rice, lime zest, garlic, pepper and butter. Bring to a boil. Cover and reduce heat to low. Simmer for 30 minutes. Remove from heat. Uncover and add cilantro and lime juice, stirring to combine. Serves 6 as a side dish.
