Cafe Rio Pork Salad

Ingredients for Pork:
  • 5-6 lbs Pork Roast
  • 1 12 oz bottle taco sauce
  • 1 Tbsp cumin
  • 1 C brown sugar
  • 1 20 oz regular coke

Mix sugar, cumin, coke, and taco sauce. Put in crock pot with roast. Slow cook on Low for 8 hours. Shred pork and cook for an additional 2 hours. Serves 16

351 calories in one serving (1/3 lb), 13.5 g fat (4.9 saturated)

For the salad: layer rice, black beans, pork, and salad over a tortilla. Top with Cafe Rio dressing, pico de gallo, guacamole, and fried tortilla strips.
