Hummus

Ingredients:
  • 1 (15 oz) can of chickpeas, a.k.a. Garbanzo beans, drained and rinsed
  • 1 medium garlic clove, minced
  • 3/4 tsp salt
  • pinch cayenne pepper
  • 3 Tbsp juice from 1 large lemon
  • 1/4 C tahini (a sesame paste usually found by peanut butter or organic foods)
  • 1/4 C extra-virgin olive oil
  • 1/4 C water

Process all of the ingredients in a food processor until smooth, about 40 seconds. Transfer to a serving bowl, cover with plastic wrap and chill for 30 minutes; serve cold with pita bread.

400 calories in 1/4 C, 18.7 g fat (2.4 g saturated), 13.3 g dietary fiber
