- 1 (15 oz) can of chickpeas, a.k.a. Garbanzo beans, drained and rinsed
- 1 medium garlic clove, minced
- 3/4 tsp salt
- pinch cayenne pepper
- 3 Tbsp juice from 1 large lemon
- 1/4 C tahini (a sesame paste usually found by peanut butter or organic foods)
- 1/4 C extra-virgin olive oil
- 1/4 C water
Process all of the ingredients in a food processor until smooth, about 40 seconds. Transfer to a serving bowl, cover with plastic wrap and chill for 30 minutes; serve cold with pita bread.
