Zucchini Soup

This is my six-year-old, Gabby's, favorite soup.

Ingredients:

  • 3 Tbsp butter
  • 3/4 C chopped onion
  • 3 Tbsp flour
  • 2 C chicken broth (or vegetable broth for vegetarian version)
  • 2 lbs zucchini
  • 3 C milk
  • 1/2 tsp Worcestershire sauce
  • 3/4 tsp salt
  • 2 C grated cheddar cheese

Directions

Wash zucchini; cut off ends and grate coarsely (I use my food processor to grate). Melt butter in a 3 quart saucepan. Add onions and saute until transparent. Blend in flour and broth. Bring to a boil, stirring constantly. Add grated zucchini. Cook and stir while adding the 3 cups of milk. Add salt and Worcestershire sauce. Stir continually while adding cheese until hot. Garnish with parsley. Makes 12 (1 C) servings.
