- 1/4 C butter
- 1 C uncooked long grain white rice
- 1 Tbsp Famous Dave's BBQ sauce (or other)
- 1 tsp steak seasoning
- 1 tsp chili powder
- 1/2 tsp red pepper sauce
- 1/4 tsp cumin
- 1/8 tsp cayenne
- 1/4 tsp garlic powder
- 1/2 C finely chopped onion
- 1/4 C finely chopped green bell pepper
- 1 jalapeno, finely diced
- 1 (16 oz) can diced and peeled tomatoes
- 1 (14 1/2 oz) can chicken broth
In a large skillet, melt the butter and saute rice until lightly browned. Add BBQ sauce, seasonings, onion, green pepper, and jalapeno and cook until tender but not brown, stirring frequently. Add tomatoes and chicken broth and bring to a boil. Cover and simmer for 20 minutes. Remove from heat, mix up and serve. Makes 6 servings.
